Powered by the sun

With 10.6kW of solar installed on site, our distilling is powered by the same landscape that shapes our spirits. From heating the stills to running day to day operations, sunlight is part of the process.

It’s a quieter way to work. Slower, more considered and aligned with the rhythm of the property.

Water that matters

Water plays a critical role at every stage of distilling. From cooling to fermentation, its quality and character shape the outcome in subtle but important ways.

Collected on site, rainwater is used to cool the stills. It’s a simple and efficient system that keeps the process closely tied to the environment around us.

For fermentation, we draw water from 40 metres below ground, tapping into the Bega aquifer. This natural source provides a clean and balanced profile ideal for distilling.

The water we use contains no iron, which can interfere with flavour and fermentation and a healthy level of calcium, supporting strong, consistent yeast performance.

It’s one of those quiet advantages that doesn’t need to be seen, but can be tasted.

From solar energy to rainwater capture and aquifer-fed fermentation, the distillery operates as part of its environment rather than separate from it.

Every batch carries something of where it was made, the light, the water and the ground beneath it.
